Dartnall, from Restaurant Mosaic in Gauteng, was chosen to be SA’s ambassador of gastronomy at the prestigious Wines of South Africa 360 Years of Winemaking History celebration taking place in Hong Kong.
One of the highlights at the opening gala ceremony this past week at the Skye Restaurant was Mousse de Mer, one of Dartnall’s signature dishes and one that she showcased on the world stage a few years back.
Says Dartnall: “I am delighted that it was a crowd pleaser once again. I created it when I took part in the S.Pellegrino Audi Chef’s Cup SüdTirol in Alta Badia, Italy, as part of my prize when I was named S.Pellegrino South African Chef of the Year. The dish consists of one of South Africa’s truly traditional ingredients - rooibos tea - as well as a baby langoustine and lemongrass foam. The team and I created a seaside scene with tomato powder and little shells. It matched perfectly with Hartenberg's The Eleanor Chardonnay 2015.”
Dartnall is accompanied on her trip by two members of her Mosaic team, Antro Davel and Anna Stoffberg, as well as luggage containing unique crockery that Restaurant Mosaic has become famed for as well as a number of special South African ingredients.
So what else has this award-winning chef got planned for diners?
“I think guests are going to love African Aromas, a waterbuck fillet served with red berry jam and parsnip puree accompanied by the Crystallum Peter Max Pinot Noir 2016 from the Hemel-en-Aarde Valley.
"South Africa is renowned for its iconic Klein Constantia Vin de Constance so we are serving the 2014 vintage with The Earth Laughs in Flowers, a dessert which combines passion fruit, Valrhona chocolate and violets in a riot of colour and flavour – and yet all is not as it seems…”
Other South African wines that will be showcased at Dartnall’s various events include Meerlust, Kanonkop, Bellingham, Ken Forrester, Villiera, Boekenhoutskloof, Thelema, Vergelegen, Radford Dale, Krone Borealis, Reyneke, Richard Kershaw, Leeuwenkuil Family Vineyards, Swartland’s Porseleinberg and Nederburg.
Says Dartnall: “I feel so honoured to be able to showcase South Africa’s booming food and wine culinary scene overseas. At Mosaic, we are renowned for both our wine cellar and our feminine approach to food and wine pairings, so to do this on an international stage as an ambassador for South Africa is a great honour and a dream come true.”
